Under his careful observation the students will reproduce one of his personal signature dishes: foie gras en croute de céréales sorbet pomme.

Chef Rocha leads the team at the Michelin two-starred Relais & Chateaux Cordeillan-Bages set in the heart of the Medoc vineyards in France. He joined the kitchen as Executive Chef to Thierry Marx in 2002 and by the young age of 30 was awarded the coveted title of Meilleur Ouvrier de France. A student of the modern school of French cuisine, his expertise combines technique with tradition complimented by his own personal signature of elegance found in each dish. He defines his cuisine as “contemporary, readable, savory and well balanced – giving initiative to the product and true flavors. I garnish each dish with a touch of fantasy and research in order to delight the senses, as I particularly enjoy to surprise and reassure”.

The Cinq Sens Festival Culinaire will take place on December 6, 2014. The event for 100 guests will offer a 10-course gourmet meal prepared by the Term 7 Culinary Arts Academy students: An opportunity to put all of their hard studies into practice in an extraordinary way. To learn more about how you can attend the Festival Culinaire click here: https://bit.ly/1BMz8sG
